Cod with Olives
Ingredients
- 10 oz cod
- 4 tablespoons olive oil
- 1 clove of garlic
- 1 scallion
- 7 oz of small tomatoes
- 2 oz pitted black olives
- Pinch of chopped celery
- 14 oz pasta
- Pepper
- Salt
Instructions
- Soak the cod in cold water for four days, changing the water several times a day.
- Drain the cod and chop into smaller pieces using a fork.
- Fry chopped garlic with olive oil.
- In other bowl fry chopped green onion.
- Mix garlic and onions and add cod, chopped tomato, olives, and celery.
- Leave to simmer for 5 minutes, add salt and turn off the heat.
- Cook the pasta in salted water, but keep it "al dente".
- Drain the pasta and add it to the bowl with the cod.
- Mix everything and add a teaspoon of fresh celery, a few drops of olive oil and a pinch of freshly grounded pepper.
